Kale Sautéed with Apples
We are entering apple season and with so many tasty varieties grown in Massachusetts, it is hard to not use them in our cooking, both sweet and savory. Here's a nice recipe that uses the ever-abundant kale, inspired by a recipe someone shared with me at the Springfield Farmer's Market.
1 large onion
3 apples
olive oil
1 Tbs. Cider vinegar
1/2 cup vegetable broth
2 bunches of kale, chopped
salt and pepper to taste
Sauté onions and apples in olive oil for five minutes. Add chopped kale and cover, stirring occasionally until wilted. Add vegetable broth and vinegar and simmer for 10 minutes. Season to taste..
